Tomato Rice, a tangy, tasty and vibrant colour rice dish. It can be served with raita or pickle. Ingredients : Rice – 1 c , washed n soaked in water fr 20 min. Tomatoes – 3, chopped Onion – 1, chopped Ginger Garlic – 1 tsp Mustard seeds – 1 tsp Curry leaves-few Peanuts-2 tbsp Cashew nuts- 10 Turmeric powder – ¼ tsp Red chili powder – 2 tsp Garam masala-1 tsp Mint and Coriander leaves – To garnish, chopped Oil – 2 tbsp Salt – to taste Method : 1. Heat oil in a pressure cooker, saute mustard seeds, peanuts, cashew nuts, onion, ginger-garlic paste and curry leaves in hot oil. 2. Add tomatoes, turmeric powder, red chili powder, coriander powder, rice and salt and 2 cups of water. Pressure cook it for 2 whistles. Turn off the heat and let it cool for 10 min. 3. Mix well and garnish it with mint and coriander leaves and serve hot.

Ingredients :
Rice – 1 c , washed n soaked in water fr 20 min.
Tomatoes – 3, chopped
Onion – 1, chopped
Ginger Garlic – 1 tsp
Mustard seeds – 1 tsp
Curry leaves-few
Peanuts-2 tbsp
Cashew nuts- 10
Turmeric powder – ¼ tsp
Red chili powder – 2 tsp
Garam masala-1 tsp
Mint and Coriander leaves – To garnish, chopped
Oil – 2 tbsp
Salt – to taste

Method :
