Wash potatoes, brush with mix of salt, pepper and 1 tbsp of olive oil. Wrap each potato in foil and grill in oven for 20 min. 2. Take out from oven and open the foil. Scoop out potato from one side to make a shallow socket. Keep it aside. 3. Heat 1 tbsp of olive oil in a pan, add garlic n bell peppers. Sauté for 2 min. Turn of the heat. 4. Assemble potatoes and stuffing layers of sour cream, pesto sauce, sautéed bell peppers in scooped space. 5. Top with parsley and basil leaves. Drizzle lil olive oil and serve with mocktails or soup.
