Orange Basil Pearl Barley Salad Recipe by healthmeplease in Ingredients 1 cup pearl barley 3 cups water or stock 1 oragne de seeded chopped Hand ful of basil leaves or mint or parsely or celery choose any one flavor Hand full of salad leaves Rock Salt Pepper to taste 1 4 up diced spring onions 1 4 cup red yellow bell pepper diced i was out of supply so used raw mango also worked well For dressing 2 tbs balsamic vinegar Or 2 tbs Apple cider vinegar 1 tsp Dijon mustard Or Cayenne perpper paprika powder 3 tbs olive oil 1 cup orange juice Method Wash barley under running water and pre soak for 10 15mins Take saucepan bring water to a boil and add barley amd bring to a boil and then reduce heat Cover and cook 25 30 minutes Mostly all water will dry up or else just drain cover the lid and let it rest till cool In a mixing bowl combine orange juice olive oil balsamic vinegar and mustard or spiceces Whisk in to create dressing In a salad bowl now add the pearl barley cut oranges peppers onions and basil Add the salad leaves Toss to to coat Season with salt and pepper as desired Refrigerate Let stand for 20min before serving

Ingredients:
1 cup pearl barley

Hand full of salad leaves

Rock Salt & Pepper to taste

1/4 up diced spring onions

1/4 cup red-yellow bell pepper, diced
( i was out of supply so used raw mango...also worked well)
For dressing:

2 tbs balsamic vinegar
Or
2 tbs Apple cider vinegar

1 tsp Dijon mustard
Or
Cayenne perpper & paprika powder
3 tbs olive oil

1 cup orange juice

Method:

Wash barley under running water and pre soak for 10-15mins

Take saucepan, bring water to a boil and add barley amd bring to a boil and then reduce heat. Cover and cook 25-30 minutes.
Mostly all water will dry up or else just drain, cover the lid and let it rest till cool.

In a mixing bowl, combine orange juice, olive oil, balsamic vinegar and mustard or spiceces. Whisk in to create dressing.
In a salad bowl now add the pearl barley, cut oranges, peppers, onions and basil.

Add the salad leaves. Toss to to coat. Season with salt and pepper , as desired.

Refrigerate. Let stand for 20min before serving.
