Eggless Cold Fresh Mango Cheesecake Recipe:

For Crust:
Butter Cookies or Marie+ParleG -100 Grams
Melted Butter- 25 Grams

For Filling:
Cream Cheese- 200 Grams
Sugar- 1 Tablespoon
Condensed Milk- 3 Tablespoon
Mango Puree(Aamras)- of 2 Mangoes
White chocolate, melted- 1/4 Cup
Gelatin- 1 Tablespoon
Whipped Cream- 1 Cup
Orange food colour- One drop(Optional)

Method:
1. Firstly Grind the cookies to a fine powder in a mixer Jar. Then add
the melted butter in it and pulse it till it forms a wet mud-like
consistency.
2. Pour this mixture into a cheesecake tin and press it down with help
of hand or a spoon.
3. Keep this in fridge for about 30 minutes to 1 hour.
4. In a bowl, combine cream cheese, sugar and condensed milk. Beat
these three till it's creamy.
5. Next add in mango puree, mango essence(optional), white chocolate
and beat well for a minute or till combined.
6. Now fold in the whipped cream gently with a spatula. And lastly add
the gelatin into the mixture and give it a mix. Gelatin can be avoided
totally but then the cheesecake must be kept for a much longer period
in fridge!
7. Pour this mixture onto the Biscuit mixture. Even it out with off-set spatula.
8. Let it rest in fridge for about 8 to 10 hours or preferably a whole day!
9. Top it with aamras puree or mint leaves and enjoy!
