Vegan Cauliflower Tikka Masala Ingredients 1 medium head of cauliflower chopped into florets 2 tsp oil 1 tsp lemon juice 1/2 tsp (0.5 tsp) ground cumin 1/2 tsp (0.5 tsp) ground coriander 1/2 tsp (0.5 tsp) garam masala 1/2 tsp (0.5 tsp) smoked paprika 1/2 tsp (0.5 tsp) garlic powder 1/2 tsp (0.5 tsp) or more salt 1 Recipe my Tikka masala sauce , use 2/3 of the sauce recipe if using a small head of cauliflower 1/4 cup (2.1 oz) non dairy cream such as cashew ( (blend 1/4 cup cashews with 1/4 cup water until smooth), soy, coconut (optional) Instructions 1. If you haven't yet, make my Tikka Masala Sauce. To a large bowl, Add the chopped cauliflower florets, drizzle oil and lemon juice and toss well to coat. In a small bowl mix all the spices and salt. Sprinkle the spices all over the cauliflower and toss to coat. Spread the florets on a parchment lined baking sheet or baking dish. Bake at 400 degrees F (205 C) for 25 mins. 2. In a saucepan over medium heat or instant pot on saute mode, combine the tikka masala sauce and baked cauliflower. Add 1/4 cup of non dairy cream if needed. Mix well. Bring to a boil. Lychee Kheer Ingredients Few drops rose essence powdered green cardamom 350 gm lychee 1 1/2 litre milk 6 tbsp sugar Method 1. Place a pan on medium flame and heat milk in it. Add cardamom powder and stir well. When it turns aromatic, take it off the flame and set it aside for a while. Meanwhile, peel and de-seed the lychees. 2. Place the pan with milk on medium flame again and let it boil until it reduces to half its quantity. Add saffron and sugar in it and give it a stir. Let the sugar dissolve and sprinkle the rose essence in it. Reduce the flame and let the milk boil over low flame. Now, stir in the peeled lychees. Doodh pak Ingredients 2 litre milk 3 tbsp raisins 2 tsp powdered green cardamom, chopped pistachios, ghee & saffron 1 cup almonds 500 gm sugar 2 cup water 6 tbsp basmati rice Method 1. Soak almonds in water for almost an hour. Next soak the basmati rice for about 10-15 minutes in water. When done, drain out the extra water, peel and grind the almonds to make a smooth paste. Now, take a small bowl and dissolve saffron in it with one tablespoon of warm water. Keep this saffron water aside till required. Drain the water from the rice bowl and mix ghee in it. 2. Put a deep-bottomed pan on high flame and add milk in it, bring it to a boil. Once the milk is boiled, lower to flame to medium high and add almond paste to the milk. Stir to mix the paste well and add the soaked rice in the pan. Mix once again and let the milk simmer on low flame for about 40 minutes, while stirring continuously. 3. Add saffron water in the pan along with sugar, chopped pistachios, and raisins. Mix well and cook the milk on low flame until thick in consistency.
