Lychee Kheer Ingredients Few drops rose essence powdered green cardamom 350 gm lychee 1 1/2 litre milk 6 tbsp sugar Method 1. Place a pan on medium flame and heat milk in it. Add cardamom powder and stir well. When it turns aromatic, take it off the flame and set it aside for a while. Meanwhile, peel and de-seed the lychees. 2. Place the pan with milk on medium flame again and let it boil until it reduces to half its quantity. Add saffron and sugar in it and give it a stir. Let the sugar dissolve and sprinkle the rose essence in it. Reduce the flame and let the milk boil over low flame. Now, stir in the peeled lychees. Mix them well and ensure they are evenly coated with milk. 3. Once the milk has attained the desired consistency, take it off the flame. Transfer the kheer in a bowl and let it cool. Doodh pak Ingredients 2 litre milk 3 tbsp raisins 2 tsp powdered green cardamom, chopped pistachios, ghee & saffron 1 cup almonds 500 gm sugar 2 cup water 6 tbsp basmati rice Method 1. Soak almonds in water for almost an hour. Next soak the basmati rice for about 10-15 minutes in water. When done, drain out the extra water, peel and grind the almonds to make a smooth paste. Now, take a small bowl and dissolve saffron in it with one tablespoon of warm water. Keep this saffron water aside till required. Drain the water from the rice bowl and mix ghee in it. 2. Put a deep-bottomed pan on high flame and add milk in it, bring it to a boil. Once the milk is boiled, lower to flame to medium high and add almond paste to the milk. Stir to mix the paste well and add the soaked rice in the pan. Mix once again and let the milk simmer on low flame for about 40 minutes, while stirring continuously. 3. Add saffron water in the pan along with sugar, chopped pistachios, and raisins. Mix well and cook the milk on low flame until thick in consistency. Kesar & Dryfruit Makhana Phirni Ingredients 1/2 strand saffron2 tablespoon ghee 1/4 cup sugar 2 cup lotus seed pops (Makhana) 1 tsp powdered green cardamom 1 litre full cream milk 1 handful mixed dry fruits Method 1. Heat Ghee in the pan over the medium flame, Add the makhana (lotus seed pops) and fry till it turns crispy and brown in colour. Transfer it to a bowl and allow it to cool down. When the makhana has cooled down, put it in a ziplock bag and using a rolling pin, crush it into a powder. 2. Heat Milk in a pan, When the milk starts boiling, add the saffron strands to it and let it cook till the milk is reduced to half. Then, add the makhana powder to the pan and cook till it turns into a consistency, which is slightly thicker than a kheer. 3. Add cardamom powder and sugar to the mix. Cook for another minute and then turn off the flame. Transfer the Phirni to a serving bowl and let it chill for a while. Missing your favorite fusion South Indian fare? Here's how you can make the classic Jini Dosa at home. Some accessible ingredients and a whole lot of spices make this street food delicacy come home into your kitchen! Follow these few steps to make the perfect dosa rolls for your family! Ingredients 3 cups dosa batter ⅓ cup chopped onion, capsicum, cabbage, carrots, coriander &; spring onion greens ¾ cup finely chopped tomatoes ¼ cup schezwan sauce/sriracha sauce ¼ cup tomato ketchup &; red chilli sauce 1.5 teaspoons garam masala or pav bhaji masala 4.5 teaspoons chaat masala Butter, Oil, Salt &; Grated cheese as required Method 1. Heat & Oil a non-stick pan. 2. Take a ladle full of the dosa batter & Spread the batter to a neat round circle. 3. On a low flame cook the dosa till the top looks cooked. 4. Add 1 tbsp each of chopped cabbage, carrots, onions, capsicum, tomatoes and coriander leaves. 5. Add ½ to 1 tablespoon butter. 6. Add ½ tablespoon schezwan sauce, tomato ketchup and red chilli sauce. 7. Add ¼ teaspoon garam masala powder and ½ teaspoon chaat masala powder. 8. With a spatula or a potato masher, mix everything. 9. Spread the mixture on the center of the dosa. 10. Cover with a lid and cook for half a minute with low flame. 11. Spread the mixture on the entire dosa. 12. Cut the dosa with 4-5 parts with a pizza cutter on the Tawa itself. 13. Grate cheese and then roll each part. 14. Serve the jini dosa rolls with coconut chutney.
